Vegan Irish Stout Stew

Alright guys… back on the veggie wagon this week. I’m trying so hard to eat lots of protein, but ughh.. I just needs some carbs. This week I endured a terrible thing… braces. Yes, I am 30 years old and I have braces… Invisalign to be exact! This stew was perfect as I was adjusting! I had braces as a teenager and boy it’s 10 times worse as a grown up.

I really wanted to make something to get in the Irish Spirit this month. 99% of my inspo involved meat so I had to improvise. I figured I would try to make a traditional beef stew and swap out a few ingredients. And YESSS… this was awesome! This makes 4 huge servings and despite being a bit heavy on the carbs its pretty low in calorie. One serving is around 450 calories… not bad! πŸ’

Okay funny story… I typically go to the grocery store about 3 times a week, one big shop and two “oh shoot I forgot X” shops. I picked up everything for the stew, minus the stout. I didn’t grab any on my big shop because I couldn’t find any stouts that were vegan. I would have defaulted to Guinness but I recall my fiance saying something about fish sauce or something in it.. so that was out. I actually had to google this. Turns out breweries often use fish bladders for the filtering of cask beers. Hmmm… 

So my next trip to the store I was on the hunt for a Stout beer that was vegan. Well FAIL! I picked up this bottle from Breakside Brewery which is located here in Oregon. And gosh darn it.. it is made with ice cream! AHHHHH! How could I not realize this. I discovered it had ice cream in it right after I dumped it into the crockpot. HELLO! It says it right on the front label. D’oh! So while not technically vegan, you can easily make this vegan if you don’t make the same mistake I did. 

Turns out there are lots of vegan Stouts available. Here is a link to all vegan friendly beers. Next time I will keep this handy. I don’t claim to be a vegan, hell… I can’t even claim to be a vegetarian these days, but for all my vegan friends you can definitely enjoy this hearty stew without animal by-products!

Vegan Irish Stout Stew

A vegetable based stew with potatoes, carrots and "Beef Tips"

Ingredients

  • 2 tbsp olive oil
  • 1 large white onion
  • 4 cloves garlic
  • 1.5 lbs Yukon Gold (I used baby yukon golds)
  • 4 cups Vegetable Stock
  • 4 tbsp Tomato Paste
  • 4 Carrots
  • 12 ounces Vegan Stout
  • 2 packages Gardein Beefless Tips

Instructions

  1. Warm olive oil to medium heat in large pan. Chop onion and garlic and put in pan. Cook for 5-10 minutes, onions should be translucent. 

  2. Cut potatoes into bite size pieces, peel carrots and chop into slices

  3. Put cooked onions and garlic, vegetable stock, tomato paste, potatoes, carrots and stout into a slow cooker. Cook for 6 hours on low.

  4. Put frozen Beefless Tips into the slow cooker, and cook for another hour. Serve and enjoy! 

Recipe Notes

This recipe can also be made on the stove top. Simply simmer for an hour, add Beefless tips in the last 10 minutes.
