Happy Thursday! It’s almost the weekend!🤤 It’s been a long week. I’m looking forward to having a nice relaxing Saturday. My fiance and I do this thing, where on Friday were like okay were going to do x.. y.. and z tomorrow. Then we don’t do it and we feel guilty all day, so we officially made Saturday our lazy day. Granted I still went to the grocery store and cleaned almost all day.. but to me that is being lazy! This Saturday I’m not doing either of those tasks.. just sitting on the couch with a cider and scrolling on pinterest! Maybe some video games! *sigh* I can’t wait! ONE MORE DAY.. you can do it! LOL
So how pretty is the bruschetta? I don’t make it often but I got a craving for some bread so why not just incorporate it into dinner rather than having a big dinner and bread on the side. I was able to stay within my calories for the day and I had a huge plate of bread! YES! Ok, its not super nutrient dense, but there are some fruits and green things on there! 😈
This crusty bread is topped with peach (yum), plum and avocado as the main toppings. I wasn’t sure if I would be crazy for this, but it was pretty tasty. The sweetness of the fruit plays perfectly with the balsamic glaze!
And who doesn’t love avocado?!?! I actually didn’t like it much until I was in my mid-20’s. I was quite a picky eater as a child and teenager. Sorry Mom! But my taste buds really changed a lot as an adult. Thank goodness! I don’t think I could sustain myself off of hot pockets and mountain dew!
What is your favorite bruschetta? It’s def not a go to dish for me, but I will be testing out a few more ideas soon! I have some bread staring at me as I’m writing this!

- 1 French Baguette
- 1 Avocado
- 1 Peach
- 1 Plum
- 1/2 cup Fresh Basil
- 1 tbsp Olive Oil
- Salt and Pepper
- Balsamic Glaze
Preheat oven to 450 degrees. Dice avocado, peach and plum. Chop the basil.
Combine avocado, peach, plum and olive oil. Salt and Pepper and gently toss. Place in refrigerator.
Slice bread into 1/3" thick pieces and place on baking sheet. Heat for 4-5 minutes.
Top each piece of bread with your fruit mixture, drizzle with balsamic glaze! Enjoy!
